Summer Tabouli Salad

The heat of the past few days has left us searching the fridge for salad inspiration - this simple tabouli is a classic dish, full of flavoursome herbs. Delicious with some chunks of feta or some grilled chicken.



Nutrition Information

Benefits: Tomatoes are high in vitamin C, which helps us to absorb iron from food. Bulgar wheat is a good source of fibre, needed for a healthy digestive tract.

Ingredients: Serves 6 as a side salad, 3 as a main

  • 200 grams bulgar wheat
  • 1.5 tbsp olive oil
  • 4 vine ripened tomatoes
  • half a cucumber
  • large bunch of fresh parsley
  • large bunch of fresh mint
  • Juice of 2 lemons
  • half a red onion
  • plenty of black pepper

How to

  • 1. Dice the onion finely. Wash the cucumber and tomatoes and cut them both into small dice. Put all vegetables in a bowl together, drizzle with the olive oil and lemon, toss to coat with the mixture and set to one side.
  • 2. Put the bulgar wheat into a separate bowl and cover with boiling water. Place a layer of clingfilm over the bowl, and set to one side for 15-20 minutes until the bulgar wheat has grown in size and absorbed the water. Stir to break up and drain in a colander if necessary.
  • 3. Add the bulgar wheat to the vegetables and mix well. Season with black pepper and roughly chop the herbs - add to the bulgar wheat and vegetables and stir well. Chill for at least an hour (preferably longer).
